Caramelized Bacon Twists

Courtesy of my niece Debbie Herrald Jobst

Ingredients

1 lb. sliced bacon
1/2 cup brown sugar
2 tsp. cinnamon

Directions

Cut each bacon strip in half widthwise.  Combine brown sugar and cinnamon.
Dip bacon strips in sugar mixture; twist.  Place on foil-lined baking sheet.

Bake at 350 for 15-20 minutes
or until crisp.

May be frozen.

(I put the bacon on racks in a foil-covered pan to keep them out of the grease -
- just my preference.  Also, I bake mine longer than 20 minutes. I like mine crispy.  But be sure to use foil in your pan.)

¾ teaspoon kosher salt
1 cup finely chopped cooked chicken
12 hickory-smoked bacon slice, cut in half

Bake in preheated oven until bacon begins to crisp and chiles are softened, about 25 minutes.  Increase oven temperature to broil, and broil until bacon is crisp.  2 to 3 minutes.  Let stand 5 minutes before serving.
