Bacon Chicken Livers



This recipe has been scaled to yield 50 servings.

Prep Time: 20 Minutes
Cook Time: 15 Minutes
Ready in: 35 Minutes

Ingredients

6-1/4 pounds bacon
12-1/2 pounds fresh chicken livers
3 cups and 2 tablespoons honey

Directions

Preheat oven to broil setting.

Cut each slice of bacon in half and wrap around each chicken liver, securing with toothpicks.

Broil until bacon is cooked and crisp on one side, then turn and repeat (about 6
to 8 minutes each side).

Serve with honey in a bowl, for dipping.

Cheese-Pecan Logs

Ingredients

1 (8 oz.) pkg. cream cheese
1 cup shredded sharp cheddar cheese
1 cup blue cheese (optional)
2 tbs. chopped pimentos
2 tbs. chopped green pepper
2 tbs. finely chopped onion
1 tbs. Worcestershire sauce
1 tsp. lemon juice
1/8 tsp. black pepper
1/2 tsp. Tabasco sauce
1 tsp. garlic
1/2 tsp. cayenne
1/4 cup mayonnaise
1 cup finely chopped pecans, toasted.


Directions

Combine softened cheeses until well blended. Add all other ingredients, except pecans. Chill.

Remove from refrigerator and shape into 2 logs. Roll in pecans. Roll up in saran wrap and chill.

Serve with crackers.

Ham Balls


Pre-heat oven to 350 degrees F.
Yield: 50 balls.

Ingredients
1-1/2 pounds smoked ham, ground
1 cup fine breadcrumbs
1 beaten large egg
1/2 cup chopped onions
1/2 teaspoon cinnamon
1/2 cup milk
1 cup firmly packed brown sugar
1/2 cup water
1/2 cup pineapple juice
1/2 cup vinegar
1 teaspoon dry mustard


Directions

Mix first 6 ingredients together. Form into small balls.

Place in 9x13-inch ovenproof dish. Combine remaining ingredients and pour over balls. Bake for 1 hour. Cook covered first 1/2 hour, then uncover.

Serve warm.

Cocktail Wieners

Ingredients

1 cup hot catsup
1 tablespoon vinegar
1/3 cup whiskey
1/4 teaspoon soy sauce
1 tablespoon prepared mustard
1 1/2 tablespoon dark brown sugar
1 teaspoon Worcestershire sauce
1 (16-oz.) package wieners

Directions

Combine all ingredients, except wieners, in a saucepan. Stir well. Simmer 2 to 3 minutes, stirring constantly.

Cut wieners into bite size.
Brown in lightly oiled skillet.
Drain well on paper towels.

Add to above mixture.
Simmer 10 - 15 minutes.
Transfer to chafing dish. Serve hot.

Sauce may be doubled.

Pistachio Stuffed Mushrooms

Ingredients
20 medium-size fresh mushrooms
3 tablespoons minced onion
1/4 cup butter, melted
1/3 cup fine, dry breadcrumbs
1/2 cup chopped pistachios
2 tablespoons chopped fresh parsley
1/4 teaspoon salt
1/4 teaspoon dried marjoram
3 tablespoons butter, melted

Directions
Clean mushrooms with damp paper towels.
Remove stems, and finely chop.  Set mushroom caps aside.

Saute' stems and onion in 1/4 cup butter in skillet over medium-high heat, stirring constantly, until tender.  Remove from heat; stir in breadcrumbs and next 4 ingredients.  Spoon evenly into mushroom caps.  Place in an ungreased 15x10-inch jellyroll pan.  Drizzle with 3 tablespoons butter.  Bake at 350 degrees F. for 10 minutes.

Serve immediately.  Yield:  20 appetizers.

Caramelized Bacon Twists

Ingredients

1 lb. sliced bacon
1/2 cup brown sugar
2 tsp. cinnamon

Directions

Cut each bacon strip in half widthwise.  Combine brown sugar and cinnamon.
Dip bacon strips in sugar mixture; twist.  Place on foil-lined baking sheet.
 
Bake at 350 for 15-20 minutes
or until crisp. 


May be frozen

(I put the bacon on racks in a foil-covered pan to keep them out of the grease -
- just my preference.  Also, I bake mine longer than 20 minutes. I like mine crispy.  But be sure to use foil in your pan.)   


TRADITIONAL CHEX PARTY

Preheat over to 250*F.

Ingredients
Mix 1/4 cup (1/2 stick) butter
1 1/4 tsp. seasoned salt
4 1/2 tsp. Worcestershire sauce
6 cups corn/rice chex
2 cups wheat chex
2 cups pretzel sticks
2 cups pecans


Directions

In open roasting pan melt butter. Remove. 

Stir in seasoned salt and Worcestershire sauce. Gradually add cereals, nuts and pretzels, stirring until all pieces are evenly coated. 

Bake 1 hour, stirring every 15 min. 

Spread on absorbent paper to cool.

UPSIDE DOWN HAM LOAF

2 Tablespoons Butter
1/4 Cup Brown Sugar

Melt butter in a loaf pan
Sprinkle with brown sugar

12 Canned Pineapple Wedges
Whole cloves

Stud pineapple cubes with cloves and arrange over sugar

4 Cups Cooked Ground Ham (I buy the 97% fat free canned ham)
2 Tablespoons Grated Onions
1 Teaspoons Dry Mustard
1 Cup Bread Crumbs
1/2 Cup Pineapple Juice
2 Eggs, Slightly Beaten

Mix well and make into loaf.
Arrange on top of pineapples and sugar

Bake at 375* for 45 to 50

9 Layer Dip


Ingredients
2 Strip Lean Bacon
1 16 0z Can Refried Beans Plain
1/2 C. Sour Cream
1/2 tsp. Taco Seasoning
3/4 C. Shredded Cheddar Cheese
3/4 C. Guacamole (Frozen or Prepared is Fine)
1/3 C. Diced Tomatoes (about 1 Romano Tomato)
1 Tbsp. Fresh Cilantro Chopped Finely
2 Tbsp. Sliced Black Olives
2 Tbsp. Finely Sliced Green Onions


Preparation
Fry diced bacon until done, add refried beans and cook slowly and stirrer frequently until the bacon and bacon drippings are mixed through about 15 minutes, remove from heat.

Mix taco seasoning with sour cream and set aside.

To built 9 layer dip place ingredients in this order.

Place refried beans on serving platter spread out to 1 - 1 1/2 inches thick.
1/2 C. shredded cheese
1/2 C. prepared sour cream
3/4 C. guacamole
diced tomatoes
diced cilantro
black olives
sliced green onion
1/4 C. cheese for garnish

Serve with crisp corn chips and a very cold beverage of choice.
Makes a great snack or light lunch.
